Now You’re Cooking with Gas !

Attention Cooks: I hope you like to cook with gas or are willing to learn.
Here’s why: In our area of Mexico 99.99 % of the homes have propane gas ranges and ovens.
Why are electric ranges not more common?
That’s a good question and I have a good answer for you. It’s not that one does an inherently better job of cooking, although I admit since I learned to cook at my mother’s side on a Natural gas range, I greatly prefer to cook with gas.
No, the reason is simple. Using electricity to heat with is very expensive.
You see the government electric company changes more per kilowatt the more you use in an effort to keep electric consumption lower.
Did you know that a very high percentage of home fires start in the kitchen? Its true !
Now, our homes here at Lake Chapala Ajijic Mexico are, while not fire proof, at least fire resistant since they are made of solid brick, solid cement block, tile and other basically non combustible materials … and we have an excellent volunteer fire department with modern equipment… just in case.
But, that’s no reason to be complacent.

Never, never , never throw water on a grease fire.
The water, being heavier than oil, sinks to the bottom where it instantly becomes superheated and explodes blowing the burning oil up and out in a large fireball.
Inside the confines of a kitchen , the fire ball hits the ceiling and fills the entire room.
Also, never throw sugar or flour on a grease fire One cup of either creates the explosive force of two sticks of dynamite.
